The Pastry Chef will oversee all Pastry/Bakery operations for the organization ensuring quality, innovation, cost containment, recipe development and standards as well as engaging in media and client activities. The job involves:

 

  • Overseeing the bakery food preparation operations, including the preparation of baked goods in all food outlets, ordering bakery food items, and inventory costing
  • Reviewing, revising, creating and auditing standard operating procedures to ensure consistency of products and services within the culinary operations
  • Observing, training and evaluating associates to ensure duties are performed to company/departmental specifications, methods or preparations, portioning and the adherence to health codes
  • Administrative duties including labour input, purchasing requisitions, preparing annual financial plans and budgets, and maintaining food and beverage costs
  • Handling disputes or complaints with Associates and/or patrons while maintaining and enhancing guest satisfaction
  • Creating and developing customer driven menus that are profitable and on trend
  • Working as part of a team for the success of the business
  • Adhering to compliance and workplace policies, internal control procedures, and AGCO directives
  • Creating and participating in media opportunites to showcase Niagara Casino’s culinary excellence
  • Developing and monitoring control activities to exceed the AGCO standards and requirements
  • Flexibility to adapt to service a 24/7 organization

 

The ideal candidate has:

 

  • Minimum 5-7 years’ experience in a Food & Beverage setting involving food preparation, large volume food production, fine dining or short order cooking
  • Community College diploma and Inter Provincial Red Seal certification
  • Strong mathematical and computer skills (Excel, PowerPoint, AS400, Access and Time and Attendance system programs)
  • Demonstrated leadership skills with the ability to focus on results and promote guest service
  • Strong organization and multitasking skills focused on meeting Marketing/Sales & property revenue objectives
